Blue Cornmeal Pancakes
BLUE CORNMEAL PANCAKES
(Can also use yellow cornmeal)
1 egg
1 cup buttermilk
2 tablespoons salad oil
1/2 cup flour
1/2 cup cornmeal
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Beat egg. Add remaining ingredients and beat until smooth. Grease heated griddle or frying pan. To teset, sprinkle with a few drops of water. If the drops dance, the skillet is hot enough. Pour batter into small pancakes on skillet or griddle. Turn pancakes as soon as they are puffed and full of bubbles but before the bubbles pop. Bake until golden brown on the other side.
Serve hot with butter and syrup or honey.
