Beef and Broccoli

- Slice the beef into moderate slices, about 1/8 inch thick. Smash the garlic to release the flavor (smash it so that the inside extrudes a little out of the outer skin.) Slice the Ginger into 3 1/16 inch slices. Then, add the beef, 2 cloves of garlic, ginger, wine, sugar, cornstartch, and oyster sauce.
- Put the mixed ingredients in the refridgerator to marinate. Depending on how much flavor you want in the dish, you may want to marinate it for up to two days.
- When have completed the marination, fill up a pan so that it is just enough to cover the sliced beef. Heat the oil until it boils, then cook the marinated beef until it is tender.
- In another pot, fill it with water and when the water boils, put the broccoli in for 1 to 2 minutes.
- Drain the broccoli in the sink and run cold water over it.
- Remove all but about 2 tablespoons of oil from the pan and then add the remaining 2 cloves of garlic, broccoli, and stir for 1 to 2 minutes.
- Then, add the beef and stir.
- Add the cornstarch, and 1 tablespoon of water. When the dish is sufficiently cooked (taste it to see if you feel that it is done), add the seasame oil.
