Twice Baked Overstuffed Potatoe Boats!!

Ingredients(Serves 2)

2 large potatoes salt
sour cream pepper
butter
cheese(shreddable)
chives

Instructions
-----------------
Preheat oven to 375. Gently scrub potatoes with a sponge until only a tiny bit of the skin has been scrubbed off. Poke holes in potatoes with a fork. Place in oven. Check every few minutes until a toothpick comes out clean.(an alternative to the oven for baking them the first time is the microwave for about 15 minutes) Take them out and let cool. Cut in half and scoop out potatoes. Put them in a bowl and mash together with butter, sour cream, salt, and pepper to taste. Gently stir in the desirable amount of cheese and chives. Stuff back into the potatoe shells. Bake in oven for another 7 minutes, or until the top layer is golden brown. Cool, eat, and enjoy!!
