Ingredients

2 tablespoons instant tapioca
2 cups skim milk
1/4 cup egg sustitute
3/4 teaspoon vanilla
2 egg whites
2 teaspoons sugar
Instructions

Cook tapioca and milk in a double boiler over boiling water until tapioca becomes transparent. Slowly add hot tapioca and milk mixture to egg substitute; return mixture to double boiler. Cook, stirring constantly, until the mixture thickens. Cool on coutner for 15 minutes and add the vanilla. Beat the egg whites until very stiff, fold into tapioca mixture. Add the sugar by lightly sprinkling over the top of mixture and fold in. Cool in refrigerator for 2 hours.
