Hello there,
You mentioned that you would like to gain weight and would like to have toned abdominals...as far as gaining weight goes, yes if you do eat before you sleep you are more likely to gain weight - not exactly a great way to do so. When you do resistance and weight training you will find that you Will gain weight. Eating properly and mayhap eating more calories than you expend during a day will help as well. Keep the same amount of activity and increase the amount of calories you take in.
Keep working on your stomach, it takes at least six weeks to actually see results. Give your stomach a break as well because if you do too many crunches in one exercise session the muscle will have been built up then deteriorate because it was overworked. Add in some cardiovascular exercises to keep balanced. Doing many crunches may tone the muscle but if there is still muscle and so forth that is not toned from the crunches cardiovascular activity will help as well. Good Luck with your endeavours!
