It's not good to load up on carbs if you don't have a regular excercise program. If you do start eating more, and you don't do anything with the extra carbohydrates, they will simply be turned into fat.
Skinless chicken is a good low-fat meat, as is turkey and most other poultry. Keep in mind, regular excercise will help tone your muscles and burn fat.
