Recipe for Modhaka

(Kozhakattai)


Ingredients

Rice Flour 1 cup
Water 1/2 to 1 cup
Oil 2 tsp.
Grated Coconut 1 cup
Jaggery (Gur) 1/2 cup
Ghee (Melted Butter) 2 tsp.
Cardamom Powder 1/2 tsp.
Salt 1 pinch

Boil water in pan, and add salt and oil. Stir in rice flour until it forms a smooth, dry, paste. Keep aside. Fry the grated coconut in ghee and add cardamom powder. Add jaggery powder and mix well. Fry until thick. Roll this into small balls. Take a small scoop of the rice flour, flatten on palm, and keep one coconut ball inside, and wrap well into a conical shape. Continue to make several more and neatly arrange these in a pan. Steam for 7-10 minutes. Cool. Serve.
