| Chopped Mutton (Lamb) | 2.2 lbs |
| Basmati Rice | 2.2 lbs |
| Melted Butter (Ghee) | 1/4 cup |
| Raisins | 1/4 cup |
| Chopped Almonds | 1/4 cup |
| Whole Cloves | 4 |
| Cardamom Powder | 1 tsp |
| Garam Masala | 2 tbsp |
| Ground Ginger | 2 tsp. |
| Asafetida Powder | 1 pinch |
| Aniseeds | 1/2 tsp |
| Saffron | 1 pinch |
| Water | 2 cups |
| Salt to taste | |
| Chilli Powder to taste |
Take rice and soak in water for 2 hours. Take a large pan and add the chopped mutton. Add water and let it cook on a stove. Take a small piece of cloth and add cloves, garam masala, ground ginger, and asafetida powder to it. Tie the cloth and drop it into the pan. Add the soaked rice to the cooked mutton. Add 1 1/4 measure of water for 1 measure of rice.
Add salt and chilli powder. Cover and cook well, stirring occasionally. Once the rice is cooked, remove the cloth from the pan, and remove the pan from the stove.
Take ghee in a small fry pan, and stir fry the cardamom, aniseeds, almonds and raisins until golden brown, and add this to the rice.
Take saffron and disolve in 1 tablespoon of milk and add this to the rice, and stir well. Serve while hot.
This recipe could be altered by substituting chicken for the mutton.
