Put all the ingredients in a food processor with a plastic blade or in a blender. Puree the mixture, adding enough orange juice to make it the consistency of mashed potatoes. Place the yam stuffing into orange halves that have been fully juiced and cleaned out. Bake at 350 degrees until the stuffed oranges have been heated through, approximately 20 minutes. Serve hot or cold. Notes: Use a pastry gun to place the yam stuffing into the empty orange shells to give the dish a more festive look.
