The last step in food production on Koinae is storage. Since a bad crop could easily cripple the colony, it is important that the agricultural workers keep a large back up supply in case they do not grow enough food for some reason. To store these large amounts of food, they must utilize efficient methods of storage and preparation. One method that the colonists seem to prefer is freeze-drying.
Freeze-drying involves freezing food in a vacuum, that is to say a container without air in it. This process dehydrates the food and preserves it well for a long time. In the twentieth and early twenty-first centuries, freeze-drying was known for destroying the taste of food. Extensive research was done in the twenty-first century to improve the taste of freeze-dried food, and now it is a popular way of preserving food, on Earth as well as Mars.
