NASI (rice) LEMAK( fat from coconut milk)

Ingredients for the rice.

1 cup of rice

2 cups coconut milk

Method

Boil the rice in coconut milk. Put a little salt in it.

Cut some pandan leaves for the nice smell.

When the rice boils, turn the heat to low and leave the rice to steam for 5 minutes.

Ingredients for curry

10 tablespoons of cooking oil

1 packet of anchovies

2 big onions

1handful of red chillies

2 cucumbers

3 big juicy tomatoes

Method

1) Soak the anchovies in water to soften. Cut off the heads.

2) Fry the onions till brown and smells good. Mix the chillies in and fry till you start sneezing and your eyes go watery. Then add the anchoveries.If you prefer the dish not so spicy, cut down on the chillies. DO NOT substitute with chilly sauce. Worse still tomato sauce.

3) Slice the cucumber and tomatoes and serve them separately. The reason for these is to cool down your tongue when you eat the hot anchovies. After some time you will love this dish.
