Nutrition of rice wine
By the theory of Chinese Medicine , it can keep your body healthy if you drink rice wine for some time ,which keeps it as a popular wine for old and weak people. In southern China, It is treated as a nutrition to lying-in woman for its various vitamine and aminophenol ,which all comes from the nature without any other additive.
Product Rice Wine
1.To soak about 1 kg glutinous rice (or rice) in clear water for 24 hours.
2.To steam with steamer for half an hour (on the boiling drawer and the boiling drawer cloth directly).
3.Cooling with cold water the steamed rice until it come to about 30 degrees.
4.Put the rice and 4 grams wine yeast (see description) in pot, and stir until uniform mixing.
5.Dig a small bowl size space in the center of the rice, put about a small bowl of water in the steamer into the space.
6.Seal the pot with cling film, parcel it and put it on the heating package or windowsill where the sun can irradiate directly to maintain the temperature at 30 degrees to 35 degrees for 24 hours to 60 hours (according to the actual temperature of the fermentation the case).
7.The standard for achievement: be able to smell the wine, a little more soup, a clear sweet taste, rice is no flexible which is chewed like paper.
Pay attention: 1. Temperature must not be too high, or bacteria will die, and can not be too low, can not be fermented
2. The container used in whole process can not be used with a little oil, or you will fail!
3.Sealing is to prevent the other bacteria enter and damage the rice wine.
Bring the completed rice wine to school. We taste each other, and compare whose rice wine is more popular.
How to drink rice wine?
1.Drink directly .If you feel too strong, you may mix boiling wine with beating egg with some water.
2.Poached egg with boiling rice wine.
3.Chop up the eggs,then mix boiling wine with some water.

The wine is well done, and gives off strong wine odor. The fermentation process is about three days. I’ m feeling self-satisfied. Sweet taste of wine is in a bit spicy. The rice seems to be emptied with only one layer of shell.

The wine is done, and looks well. It has strong wine small, but when you eat it, the grains of rice are sweet. Good taste!
My students say that it has strong smell of wine, and taste is very good.
In my experiment, wine yeast and glutinous rice used 5 days to ferment, about 120 hours.
