Take a slice of
bread. Rub half a tomato on it. Sprinkle some olive oil and
a pinch of salt. Accompany this with ham, cheese, salami, etc....

and pretend you are sitting on the terrace of a Mallorcan house
watching the sun go down on our beautiful mountains.
Mix a little flour and sugar with the yeast and let it rise
Mix all the other ingredients with the yeast and then form a dough ball. Take a piece
and roll it into a long sausage and then make a spiral
Cook in a
preheated oven (190º) for 15-20 minutes until it is golden.
Take out of the oven and sprinkle with icing sugar.
This is delicious with a cup of hot chocolate. You can also fill
the ensaïmada with cream, jam, "angel hair" which is caramelized
pumpkin or any other manner of filling.
When you go to the airport in Palma, you will always see people with
flat hexagonal boxes. These contain ensaïmadas which people
