1 pound skinless boneless chicken breast
1/4 teaspoon paprika
1 teaspoon canola oil
2 cloves garlic, minced
1/3 cup low sugar Apricot Preserves
1/4 cup orange juice
1 tablespoon minced fresh cilantro
1/4 teaspoon nutmeg
1/4 teaspoon allspice
Wet the chicken and use dry paper towels to gently pat dry. After dry sprinkle the chicken with paprika.
Use a large nonstick skillet and spray with nonstick spray. heat the burners over medium high. Place the chicken in the pan and cook on that side for 4 minutes. After four min. flip the chicken and cook 4-6 more min or until the chicken is no longer a pink color. After fully cooked take off burner and cover the chicken to keep it warm.
Put the skillet back on medium high. In the skillet pour the oil and garlic. Cook for 30 seconds. last, stir in the preserves, orange juice, nutmeg, allspice and cilantro. Boil these gently and pour over the chicken. Servings: 4
