CUBAN RECIPES
OROZ CON
POLLO

INGREDIENTS
|
1 fryer cut up
|
1 tsp salt
|
|
3 garlic cloves
|
½ tsp black pepper
|
|
1 cup of
“mojo”
|
1 bay leaf
|
|
½ cup olive oil
|
2 cups sherry
|
|
1/2 green pepper
(chopped)
|
2 cups of chicken broth
|
|
1 large onion (chopped)
|
1 can of tomato sauce
|
|
1 (4 oz) jar of pimientos
|
1 lb. of rice
|
|
1 small can of peas
|
1 envelope saffron
|
|

|
HOW TO
Marinade the chicken overnight in
the “mojo” along with crushed garlic.
In a large saucepan heat 3 oz of
olive oil and fry the chicken until browned.
Add the chopped onion, green pepper
until cooked.
Add tomato sauce, the pimientos that
have been pureed along with the liquid from the can, the liquid
from the can of peas, salt, pepper, bay leaf, saffron, cooking
wine, chicken broth, the “mojo” the chicken was
marinated in.
Stir and bring to a boil, reduce
heat, and with lid on simmer for 10 minutes.
Bring to a boil again and add rice.
When it comes to a boil again, stir
and cover tightly. Simmer until rice is
cooked.
When done add
peas.
