Spaghetti Squash Mozzarella


Spaghetti squash is a large oblong yellow summer squash that separates into spaghetti-like strands after it is cooked.

Ingredients:

  • ½ spaghetti squash, cut lengthwise
  • 2 ounces (1/2 cup) shredded part-skim mozzarella cheese
  • 1 Tablespoon grated Parmesan cheese
  • 3 Tablespoons seasoned dry bread crumbs
  • 1 teaspoon garlic powder
  • 1 Tablespoon chopped parsley

Steps:

  • Clean out seeds from squash.
  • Place squash, cut side down, in a pot with 2 inches of water; cover and boil for 20 minutes.
  • Completely scoop out strands of cooked squash into a bowl by running a fork over inside.
  • In another bowl, combine remaining ingredients and mix well.
  • Add this mixture to bowl with the squash and blend.
  • Place in a casserole dish and bake uncovered at 350 degrees until slightly browned and cheese melts, about 20 minutes.
