Spaghetti Squash Mozzarella
Spaghetti squash is a large oblong yellow summer squash that separates
into spaghetti-like strands after it is cooked.
Ingredients:
- ½ spaghetti squash, cut lengthwise

- 2 ounces (1/2 cup) shredded part-skim mozzarella cheese

- 1 Tablespoon grated Parmesan cheese
- 3 Tablespoons seasoned dry bread crumbs
- 1 teaspoon garlic powder
- 1 Tablespoon chopped parsley
Steps:
- Clean out seeds from squash.
- Place squash, cut side down, in a pot with 2 inches of water;
cover and boil for 20 minutes.
- Completely scoop out strands of cooked squash into a bowl
by running a fork over inside.
- In another bowl, combine remaining ingredients and mix well.
- Add this mixture to bowl with the squash and blend.
- Place in a casserole dish and bake uncovered at 350 degrees
until slightly browned and cheese melts, about 20 minutes.
