
Ingredients:
- 2lb.
dry kidney beans
2 med. Onions (chopped)
1 cup celery (chopped)
6 green onions (chopped)
1 lb. sausage (sliced)
3 garlic cloves (minced) optional
Cajun seasoning (hot sauce) optional

Recipe:
wash and soak the beans over night (if using dry)
drain and put the beans into a cook pot
cover with water and bring to boil over high heat
stir well and let beans cook
add sausage, onions, and seasoning
bring to a boiling point
reduce heat and simmer for 2-3 hrs until beans are tender
for a thick gravy, move 1 cup of beans and mash through strainer
add back to the pot and stir
serve over hot rice if you wish
